Add support for dark mode logo

Currently the Eclipse Temurin logo renders well in light mode but not in dark mode. It would be great to have the option to add a second logo for dark mode users:

Docker Hub does not currently support having different icons for light and dark mode so we cannot support it from the DOI docs automations. We have brought this feature request to the attention of the Hub UI developers and they are investigating its feasibility.
