Adds a 26.1.2 NMS module copied from the 1.21.11 implementation, configures it for Java 25 and the latest Folia 26.1.2 dev bundle, updates Gradle to 9.5.1, centralizes Paperweight 2.0.0-beta.21, and removes the obsolete Evoke snapshots repository.
